So here it is – the 30-day vegan challenge day 1!
I’m not gonna lie – this is going to be hard.
Two years ago when I decided to go Vegetarian for 30 days the first thing I realized was how much more cooking I would be doing and how much planning it would take when I went somewhere.
Because of the holiday and being gone for the New Year’s weekend, I was not quite ready to eat Vegan today.
But I did.
I woke up and brewed my decaf coffee (part of the detox I am doing) and had to have it black because I didn’t have any non-dairy creamer on hand (and I don’t really like it anyway – so we’ll see if I’m able to wean myself from cream in my coffee through this).
My husband and I are starting our detox today with fruit so I had an orange and an apple on my way out the door to head to the grocery store. I had a TON of vegetables to buy because on top of my vegan challenge, my husband will be on a 2-week juice fast and we are new to juicing so I have no clue how much to buy. I’m sure I will have a few juicing posts coming.
I purposely wasn’t going to eat a lot today. I cannot even begin to describe the amount of food that I consumed this weekend at our New Year’s weekend with friends. Christmas cookies, dips, salsa, chips, more cookies, more dip… I still felt full this morning at breakfast!
I spent longer at the grocery store than I wanted and I was so hungry by the time I was in the checkout. I scored some almonds in the line which was a great snack to curb my hunger.
When I got home, I decided to munch on some hummus and carrots. I will post the hummus recipe this week – if you are in need of some really great snacking that is healthy – hummus is where its at!
While all my boys were out sledding in the freshly fallen snow (finally!) I cooked up a batch of Moosewood Restaurant’s West African Peanut Soup. The bonus was being able to try out my new immersion blender which was SO great. how have I gotten along without one all this time?
You must try this soup – its so rich and spicy and delicious. You can definitely tame the spice down to make it kid friendly. I enjoyed a big bowl of soup and later another orange for a snack.
I was feeling a bit headach-y which I expected. So I grabbed a big glass of water and made a batch of popcorn in my new whirly pop popcorn maker! It was a yummy snack complete wtih Earth Balance and salt and papper. Just the way I like it.
