When I eat vegan during the month of January every year, I need inspiration. I check out vegan cookbooks from the library, I look up ideas on finding vegan and I read all the blogs I can find on the vegan diet. I also watch life changing documentaries like Vegucated and Forks over Knives. These books and movies inspire me and light a fire in me that points me toward the plant based diet that I desire to adhere to. It isn’t easy, but with these mentors, I feel like I have support and a little hand holding when the cheese beckons.
I feel that way about Alicia Silverstone.
I don’t just love Alicia Silverstone because she was so great in that old movie Clueless, and made a great bat girl back in the day.
I don’t love her because she is a really cool, down to earth actress.
I don’t just love her because she lives her passion for veganism and has a wonderful blog to share all her views and recipes.
I don’t just love her because she wrote a wonderful cookbook that not only contains amazing recipes, but is extremely educational on the essence of a vegan diet.
I think I just love her…
because of this recipe.
Make these.
Make them today.
