Did you know movie popcorn butter is Vegan?
Before I went to the movies with my sister on Friday to see War Horse on Friday, I had to do a little research to make sure I could eat the popcorn. And yes, I could. (yay).
You know what else is Vegan?
I’m sorry, but that’s just weird.
Being on a Vegan diet you can sure cram your face with a lot of junk food. But just like any Carnivore you will still feel crappy afterwards, and what I’m realizing its just not worth it.
I mean sure, we all want junk food every so often (like at the movies), but I hope I’m learning my lesson that gorging myself on enough chips and salsa and Christmas cookies in one weekend to feed an army is just not. a. good. thing.
I feel like my body is finally recovered from the over-eating the holidays bring. It feels good to have my internal body feel “clean”.
I am actually enjoying going through the detox process, headaches and all.
One thing that has been helping is yummy green juices for my morning breakfast. Oranges, carrot, apple and kale. A great way to start the day!
For another healthy lunch this weekend, I made egg-less egg salad. That’s just weird too, isn’t it?
Well you know what, it might be weird, but it’s healthy and delicious and quite honestly, you can barely tell the difference. Tofu is really similar to an egg in texture and when you mix it up with all the lovely ingredients that make egg salad an egg salad with a bit of turmeric to give it the yellow color, its virtually the same.
So, embrace the weird and try it! You just might be surprised!
Recipe ~ Egg-less Salad

1 block extra firm organic tofu
2 stalks celery, chopped
1/2 red pepper, chopped
1/4 cup dill pickle relish
1 tablespoon nutritional yeast
1/4 – 1/3 cup Vegannaise
1 tablespoon Dijon mustard
2 teaspoons turmeric
1/2 teaspoon onion powders
salt and pepper to taste
Crumble the tofu with a fork and add remaining ingredients and stir well. Serve on two slices of toasted Ezekiel bread.
