When I started this journey, I knew it would be hard, but what I didn’t realize was how easy it would be.
Wait – what?
Yes, that’s what I mean. It was really quite easy to do. At first I felt challenged to try and have inspiring meals for everyone to see what I was eating, but when I took that pressure off myself and just did what felt right to me, it went really well. Overall it meant cooking and preparing everything I would eat, not eating out (which we rarely do anyway), cutting out cheesy snack foods, sour cream laden dips and one of the harder ones – my Chardonnay. Yes, there are vegan wines out there, but I chose to fore-go it all together.
I had my boring cereal and almond milk breakfasts, and leftover lunches but there were highlights along the way including a vegan themed fancy lunch club (I have the best friends), some vegan Sunday morning pancakes, and tonight’s recipe – banana soft serve ice cream!
I’m telling you, you have to see this to believe it.
There are a million bloggers out there talking about it but here you can see some step by step instructions. You basically peel and cut one bunch of bananas into 1-inch pieces. Freeze them in a freezer bag and process in your food processor until it becomes ice cream.
No, I’m not kidding.
You just have to do it to believe it. Once you get it to the ice cream consistency you can do anything flavor wise that you want – I added cocoa powder and you could add peanut butter, chocolate chips, really anything would work.
My kids are absolutely loving this and they could even eat it for breakfast!
Its just bananas after all (and you would be a rock star mom)!
So have I become a vegan?
I consider myself a wannabe vegan. I am constantly torn by the ethical issues surrounding eating animals which is not something I have talked about much here or anywhere for that matter. I’m still researching and gaining conviction about it, but until then, I will relax my stance on vegan eating while continuing to cook and eat many things that are vegan.
I feel amazing and there is a part of this that will not change much tomorrow when I go back to being “just a vegetarian”. I plan to make stuffed pablano peppers tomorrow night and a vegan pineapple upside down cake this weekend.
But I will have a glass of wine too.
Oh and some banana ice cream.
