Schools are back in session, everyone is busy with homework and many families are running around to get their kids to sports and other after school activities. Needless to say, we are busy. I think we can all use quick go-to meals that you can prepare in no time. This week I will be bringing you a couple recipes to get you started on quick meals that pack a great punch.
There is still a great bounty of produce to be bought at the farmer’s market and that is what made up my lunch time wraps this weekend! Obviously the tomatoes are wonderfully sweet, along with fresh mixed greens, shaved carrot, avocado and a bit of fresh basil in this hummus, this wrap was nutrient packed and delicious.
One way to up your nutrients in hummus (which is packed with protein!) is by adding Nutritional Yeast. This powerhouse ingredient is an inactive yeast that is the only reliable food source of vitamin B-12, and with its cheesy flavor, its a favorite ingredient among vegans. You can find it in bulk at any health food store.
Get creative with your veggie wraps by adding whatever fresh seasonal produce is on hand. Add this hummus recipe to your repertoire and you will always have delicious sandwiches, wraps or a yummy dip right at your finger tips!

Basil “Kissed” Hummus
1 can chick peas, drained and rinsed
1 large clove garlic
juice from half a lemon
2 tablespoons tahini
2 tablespoons nutritional yeast
1/8 teaspoon salt
1/8 teaspoon pepper
1 small bunch basil – just a few leaves will do the trick!
1/4-1/2 cup EVOO
Whirl everything in a food processor or high speed blender. Drizzle in EVOO until smooth and creamy.
