I don’t understand my children.
They are crazy and weird and finicky and sometimes throw fits for no apparent reason.
One day they wonder what in the world is my homemade sour dough bread, turning up their noses… and then the next they say, “Mom you know I don’t like that bread (referring to the regular store-bought sandwich bread), I want the sour toast!”
One day yell and scream for MEAT burgers instead of veggie burgers, but the next day they are gobbling up my tofu bites with homemade cocktail sauce.
I can’t figure them out.
So when I made this super special hidden veggies tomato soup with fresh dill, I just knew they would hate it. I mean it was full of carrots, celery, onion, spices, and even spinach!
They raved about it, said it was their favorite tomato soup (and I make variations of it a lot), and tonight when my son was sitting next to me watching me edit my picture of it, he said, “oh that was that yummy soup!”
I hope you make this soon and feed it to your crazy kids!
oh and feel free to make this vegan by leaving out the yogurt (you could sub for a bit of almond milk or coconut milk) and use daiya cheese on your grilled bread! YUM!
Recipe~Special Tomato Soup with Fresh Dill

2 tablespoons EVOO
1 carrot, chopped
1 celery, chopped
1/2 onion, diced
2 cups vegetable broth
2 can fire roasted tomatoes
1 tablespoon dried basil
2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/2 teaspoon red pepper flakes
big bunch spinach
2 tablespoons fresh dill
1/4 cup Greek yogurt
Saute the carrot, celery and onion in EVOO until tender. Add vegetable broth, tomatoes and all spices except fresh dill. Bring to a boil and immediately turn heat down to a simmer. Add bunch of spinach and fresh dill. Let simmer for about 15 minutes. Using an immersion blender, puree the soup until everything is blended well. (If you don’t have an immersion blender, puree the soup in batches in a regular blender or food processor). Add the yogurt and heat through. Garnish with a sprig of dill and serve with grilled cheese!
