Its been a whirlwind summer so far.
I have directed a week of Therapeutic Riding camp at the wonderful Camp Manitou-Lin which was exhausting and oh so rewarding. We have been up north for a weekend twice with two different families where there was relaxing, boating, dining, and shopping. And then there have been the very hot Midwest days spent at my Aunt Joanne’s pool with my boys watching them swim like fish, just like I used to.
I love summer.
I love the unscheduled, unstructured days and the constant travel.
I love working in my garden with the hopes of a bountiful harvest.
I love watching my kids have the time of their lives.
And I love the food. Corn, tomatoes, fresh herbs everywhere and roadside stands with juicy peaches.
We are leaving today for beautiful Lake Superior and I plan to take advantage of the farmer’s markets and card tables that are set up along the way so that we can eat simple, beautiful food while up there.
Traveling as a vegetarian is definitely a bit more challenging normally, but in the summer I enjoy just filling up with all the fresh produce I find in abundance.
I hope to write more about traveling and eating well vegetarian or not – it can be a challenge as a family. My husband and I have a
secret dream of traveling full-time one day and so we pack our summers trying out different destinations and challenging ourselves and our kids.
As of tomorrow, we will be on a beach for two weeks with no electricity and no running water. It will be a time of play, reflection, and truly “shutting down”. Something we all need from time to time.
I hope you are enjoying your summer. I hope you are relaxing, enjoying watching your kids really be kids and getting some true down time.
Oh yeah, and smile… because tomatoes are coming!
